Loaded chicken & rice when you’re craving deliciousness fast. Just pop the rice in the microwave for 2 minutes, toss it with shredded chicken and shake it all together. Perfect for meal prep or speedy weekday lunches and dinners, this recipe is high in protein and fiber.

Ingredients
2 packs Veetee Steam Filtered Basmati Rice Pots
2 cooked chicken breasts, shredded
4 spring onions, finely chopped
½ cucumber, diced
100g radishes, sliced
1 handful fresh coriander, chopped
1 tbsp sesame seeds, toasted
3 tbsp soy sauce
1 tbsp crispy chilli oil (adjust to your spice preference)
1 tbsp sriracha (optional)
Salt & pepper, to taste
Method
Microwave the Veetee Basmati Rice according to pack instructions (usually 2 minutes).
Add the rice, chicken, spring onions, cucumber, radish and coriander to a bowl or jar.
Add the sesame seeds, soy sauce, crispy chilli oil and some optional sriracha. Pop a lid on top and give it a proper shake.
Taste and adjust the seasoning to taste with salt and pepper, depending on how you like it.
